TOJIRO Double-Edged Shirogami Petty Knife 15cm
Tojiro's Shirogami Utility is a great multi-purpose entry-level knife into the mystical world of carbon reactive Japanese knives. Shirogami White steel #2 will change color, get patina, and, if not taken care of properly, develop rust. The advantage of Shirogami steel is the ability to be sharpened to a very sharp edge quite easily.
Utility knives are basically a smaller version of Gyutos (Chef's knives), intended for all those smaller tasks where larger knives are deemed unwieldy. A must-have knife in every kitchen since it is used for peeling, paring and decorating food.
The knife was left an unprocessed black patina on top of the blade, called kuro-uchi, which gives it a raw, unfinished look. The traditional Japanese D-shaped handle is made of magnolia wood and boast a plastic ferrule.
Core blade by Shirogami steel, outer layer by soft iron, it is easy to re-sharpen and has good edge retention. Shirogami steel is iron sand as raw material, it is very purified steel, and temperature control during itsheat processing requires skill.
Handle is made from magnolia and has good water resistance.
